How to use them
Always keep a bag of baby spinach leaves in the fridge. Rinsed leaves can make an instant salad or top off a sandwich-and they're very nutritious. Make hot and fast side dish wilted spinach. Just heat a teaspoon of olive oil, a crushed garlic clove and some black pepper in a nonstick skillet over medium heat, then toss in four handfuls of spinach leaves and turn them for a minute or two.

What you'll need
• 24 large frozen shrimps
• ½ c chopped baby spinach leaves
• 1 tsp olive oil
• 1 clove garlic, crushed
• ½ tsp dried basil
• A splash or two of hot sauce
• 1 tbsp low-fat yoghurt
How to make it
Mix all the ingredients in a large microwavable bowl, tossing well to coat the shrimp. Microwave for 1 minute. Remove and toss again. Nuke for 1 minute and 15 seconds more. Makes 2 servings
